CEV Siargao at Bourke’s

From Philippines to Hong Kong, @cevsiargao brings the tropical, local flavours of Siargao Island to Bourke’s for the second leg of their unofficial 2025 “World Tour”.

Cev is the world’s only Ceviche and Kinilaw restaurant, located in Siargao Island, run by Executive Chef & Owner @daviddelro. ‘Kinilaw’ is the Filipino counterpart of Ceviche, using coconut vinegar instead of lime juice — an under-appreciated dish that belongs to the same echelon as other popular Filipino staples.

For 2-days only, Chef David will be diving into our kitchen alongside cousin, and our Head Chef @taramargaritad, crafting a collab menu that promises to reflect the flavours and ingredients that stays true to the island’s palate and produce, and their Filipino roots.

There will be a mix of small and large plates, encouraged to order and share family-style, paired with special Bourke’s cocktails made just for this event.
