We’re keeping the takeover train rolling, teaming up with some of our absolute favourite chefs from around the globe. This time, we’re bringing Aussie legends Laura Sharrad and her chef-husband Max Sharrad to Bourke’s for an exclusive two-night Hong Kong pop-up.

From her breakout as the youngest Top-3 contestant at just 18, runner-up again in Season 12, to making history as the ultimate winner of @masterchefau Season 17 in 2025! Laura’s journey is one of unmatched passion, resilience, and pure culinary power. Fresh off MasterChef, Laura and Max—the duo and co-founders behind Adelaide’s acclaimed pasta bar @nidobarpasta and the vibrant Italo-American @fugazzi.bdr Bar & Dining—are bringing their deep Italian heritage straight to Hong Kong’s Soho. With Max’s background in kitchens like Orana, Noma and L’Enclume combined with their shared obsession for simple, seasonal dishes, expect a menu built on extraordinary ingredients and serious skill.

Together with the Bourke’s team, the couple will be serving up a bold Italo-Australian feast loaded with deep-rooted tradition, paired alongside custom @campariofficial @camparihk cocktail creations by yours truly. It’s another pop-up you’d be mad to miss.
